Meet Henri Lambert.

Henri Lambert, a trained French chef opened his saloon and restaurant in Cimarron, New Mexico in 1872. From this beginning his hotel was known for its fine dining and comfortably furnished rooms.  Wild and unruly Cimarron left its mark on the hotel over the years. You can still see bullet holes in the ceiling of the present day TJ’s Bar which attest to the drinking, gambling and fighting.
